A little about these muffins

These cottage cheese protein muffins are a pretty easy breakfast to make. Everything goes into a blender and then into the oven. You can also add berries or chocolate chips if you want.

Ingredients

Instructions

  1. Preheat oven to 350°F and grease a muffin tin.
  2. Add all ingredients to a blender or food processor. Blend until there aren't any chunks left. Fold in berries or other add-ins after blending. If using frozen berries, chop them into small pieces.
  3. Divide the batter evenly into the muffin tin. It should make around 8 muffins.
  4. Bake for 20-25 minutes. The tops should feel firm and a toothpick should come out clean. Frozen berries might mean a few more minutes in the oven.
  5. Let them cool a little and enjoy! Store them in an airtight container in the fridge for up to 5 days.

some extra notes

Don't overbake them or they can get dry. Berries are a good addition, but frozen ones can make the middle more moist. You can warm them up again before eating.
